- 6 chicken breasts (weird parts removed)
- 3-4 tablespoons avocado or olive oil
- 3-4 cloves fresh garlic
- 1-1.5 jars of jalapeño pepper jelly (depending on how much sauce you want)
- 1/8 cup soy sauce
- flour

- Trim weird bits off chicken breasts & place in large ziplock bag
- Use the flat side of a meat tenderizer to flatten out the chicken a bit (this helps the flavor get deep into the meat). Set aside.
- Heat oil in a large pan
- Coat each side of the chicken breast with flour and place in the hot oil to brown for 5 minutes then flip and brown the opposite side for another 5 minutes.
- Remove chicken from the pan and remove pan from the heat and scrape any brown bits off the bottom of the pan.
- Allow the pan to cool for 10 minutes then return to heat on low.
- Add garlic, jelly & soy sauce to the pan stirring often until the jelly melts.
- Bring sauce to a simmer and add chicken to the pan.
- Cover and simmer for 15 minutes.
- Flip chicken over and cover & simmer on low for 20 minutes then serve.
Notes
I serve this with rice & sautéd green beans.
