Fresh Milled Flour Chocolate Chip Cookies
If you want to bake delicious chocolate chip cookies that are chewy and almost caramelized on the edges but soft and chocolaty on the inside then this is your new go-to recipe. The best part is, this recipe uses fresh milled flour, so you’re getting natural protein and minerals from this delicious cookie. I use einkorn and Kamut when I make these.

Ingredients
- 2 cups of fresh milled flour (I use einkorn) (if you want to use store bought flour, use 2 cups + 3 tablespoons)
- 1 1/2 sticks of butter
- 2 tsp vanilla
- 2 eggs
- 1 tsp baking soda
- 2 tsp cornstarch
- 1 tsp salt
- 1 cup dark brown sugar
- 1/2 cup of sugar
- 2 cups of chocolate chips (3 cups if you’re insane like me)

Preparation
- Cream together butter and sugar
- Add egg & vanilla
- Mix in dry ingredients except flour
- Mix in flour 1/2 cup at a time
- Fold in chocolate chips
- Cover & rest at room temperature for 30 minutes then place in the fridge for 30 minutes.
- Do not skip step 6. Fresh milled flour needs time to absorb moisture. If you skip this step your cookies will be flat cracker dust.
- Roll into golf ball size balls & place on cookie sheet (6-8 per sheet)
- Bake at 350° for 10-12 minutes.
- Allow cookies to cool on sheet for 10 minutes before transferring.
