Tropical Salad Freeze

Frozen fruit salad recipes were popular during the Great Depression era because canned fruit, specifically pineapple and maraschino cherries, because of affordability, availability, and shelf stability. Chopped nuts were added for a “fancier” version…. which describes my grandmother perfectly. Don’t let the sour cream throw you off; this dessert is AMAZING!

Tropical Salad Freeze

This recipe, from Nona’s cookbook, was popular during the Great Depression era. It tastes like a slightly tart banana split.

Ingredients

Ingredients
  • 2 large bananas
  • 3/4 cup of sugar
  • 1 small can of crushed pineapple (8.5 oz)
  • 2 tablespoons of chopped maraschino cherries
  • 2 tablespoons lemon juice
  • 2 cups sour cream
  • 1/2 cup chopped nuts (we use pecans here in the south)

Instructions

Preparation
  1. Mash bananas gently, blend in all other ingredients. Pour into a tray or salad mold and freeze for at least 4 hours.
  2. Nona’s recipe says to “serve on salad greens”, but I’m not that fancy. I cut these into squares once frozen for a grab & go snack.

Notes

These make excellent popsicles!
