The Best Chicken Noodle Soup

The Best Chicken Soup You’ll Ever Make

This hearty, creamy chicken soup is perfect for cold nights at home.

- 2 lb diced chicken breasts or tenders (weird parts removed)
- 1 package of turkey bacon
- 1 small onion
- 1 cup chopped carrots
- 3 stalks of celery, chopped
- 3 garlic cloves
- 1 tablespoon of salt
- 1 tablespoon of black pepper (or more if you like)
- 1 tablespoon of rubbed sage
- 1 teaspoon tarragon
- 1 teaspoon basil
- red pepper flakes if you like a kick of spice
- 2 bay leaves
- 1 package of ranch dip seasoning (I’ve also used other dip seasoning packets like jalapeño cheddar from Rustlin Robs in Fredericksburg, TX)
- 8 oz of cream cheese or Neufchâtel cheese
- 64 oz chicken stock or bone broth
- 16 oz of your favorite pasta
- Shredded cheddar or mixed cheese blend
- 4 green onions chopped for topping

- Cook the entire pack of turkey bacon then chop into small pieces (I put it on a baking sheet & put it in the oven at 375° until it’s crispy). Set aside.
- Add about 3 tablespoons of oil or butter to a big stock pot & sauté veggies and garlic on medium heat until onions are clear.
- Add in the chicken and spices & cook until the chicken starts to turn slightly golden. Then add in 1/2 of the chopped bacon and mix well.
- Add the chicken broth & stir until evenly mixed. Bring this to a boil then reduce the heat to low & cover with a lid. Allow the soup to simmer for at least 3 hours.
- An hour before you want to serve, add in the cream cheese and uncooked pasta. Keep the soup covered and at a simmer but stir often to prevent the pasta from clumping together. Cream cheese pieces might be visible, but they will continue to mix in.
- right before serving, mix in 1/2 the package of shredded cheese until just melted.
- Garnish the soup with shredded cheese, the remaining bacon pieces & green onions.
