Nutritious, chewy, gluten-free oatmeal cookies (can easily be vegan)


Ingredients

Ingredients
  • 1/2 cup brown sugar
  • 1/4 cup agave nectar (date syrup & honey can also be used)
  • 3 Tbl almond butter
  • 1 egg (use egg sub for vegan alternative)
  • 1 tsp vanilla
  • 1 1/4 cup rolled oats
  • 1/2 cup oat Flour
  • 1/2 cup oat bran or flax meal
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips (semi-sweet or dark)
  • 1/4 cup flax seeds
  • 1/4 cup hemp seeds

Instructions

Directions
  1. Throw all the things in a bowl & mix well.
  2. Form into pingpong ball size balls & place on a pre-oiled baking sheet about 2 inches apart.
  3. Bake at 350° for 10-12 minutes.
  4. Cool for 10 minutes on baking sheet then transfer to a plate (or large piece of foil on the kitchen counter like me) to completely cool.

Notes

Tips: Scoop the dough with a spoon or spatula & press against the wall of the bowl to squish the dough together before rolling into balls. The whole oats keep the dough loosely formed which can make rolling into balls messy. If you squish the dough in the bowl first, it will roll out much easier.


Allow the cookies to set flat for 24 hours before storing or they may stick together when stacked or placed in bags.
